At Lee Fish in Leigh, north of Auckland, Ian Strongman loads Southern Bluefin Tuna onto a truck to be transported to Auckland International Airport to be exported to the Japanese market. Each fish will be laid out on the floor at fish markets and auctioned to the highest bidder.
