The fishery for pot-caught Chatham Islands blue cod ticks many quality and sustainability boxes: target fish are brought to the surface alive and in perfect condition; non-target fish likewise, so they can be released unharmed; undersized fish escape through the meshes; there is minimal impact to the seabed and the benthic communities that live there; and the bait is paua guts, a by-product of the paua fishery. The fish in this pot, caught to order, are destined for restaurant tables in Melbourne and Sydney.
